College Student Recipes: Easy Chili Fry Bread

Navajo Tacos are fry bread topped with homemade chili and taco fixings. became a Navajo tradition in the mid-1800s. As years passed it became a common food among many tribes across the American continents. Today, fry bread is often found at state fairs and is served with honey, cinnamon, sugar or honey butter.

Chili Ingredients
- 1 lb ground beef
- ½ cup chopped onion
- ½ cup chopped green pepper
- 1 clove garlic, minced
- 1 can diced tomatoes (16 oz)
- 1 can dark red kidney beans, drained (16 oz)
- 1 can tomato sauce (8 oz)
- 2 tsp chili powder
- ½ tsp basil
- ½ tsp salt
- ½ tsp pepper
Scone Ingredients
- 8 Terrell’s Country Bakery Rolls & Scones Dough
- Grated cheese
- Shredded lettuce
- Diced tomatoes
- Sour cream
- 2 quarts oil, for frying
Chili Recipe
- Brown hamburger, onion, green pepper and garlic together in a large pot.
- Stir in undrained tomatoes, kidney beans, tomato sauce, chili powder, basil, salt and pepper.
- Bring to boil.
- Reduce heat, cover and let simmer for 20 minutes.
Scone Recipe
- Thaw frozen dough
- Line cooling racks or plates with paper towels.
- Fill a large saucepan with 2 inches of oil.
- Heat oil on stove over medium-high heat to 350-375 degrees Fahrenheit.
- Use your fingers to stretch out the balls of dough (rub flour on your hands if the dough is sticking to your fingers).
- Carefully place two flattened balls of dough in oil.
- Fry until golden brown on each side (about 1-2 minutes).
- Transfer to paper towels to drain.
- Repeat until the dough is all fried.
- Serve hot and top with cooked chili, cheese, lettuce, tomatoes, sour cream and anything else you’d like to add.
- Save a few for dessert to eat with honey, cinnamon sugar or honey butter.
